Okay, I’ve heard you loud and clear! So many of you have been asking for my go-to recipes, and I’m finally getting them out there—starting with one of my absolute favorites!
Let’s kick things off with a bang: my all-time favorite gluten-free, dairy-optional chocolate chip cookies. I got a version of this recipe from a friend about three years ago (who found it on the back of a bag of carob chips!), and since then, I’ve given it a few tweaks. They’re a hit with everyone who tries them, so I know you’re going to love them too.
How to Get Your Perfect Cookie Texture:
Here’s where it gets fun! The baking method can be adjusted depending on your texture preference:
- Crispy Cookies: Flatten the dough on the baking sheet and bake at 375°F for about 8 minutes. This will give you thin, deliciously crispy cookies.
- Crispy Outside with a Chewy Center: Follow the instructions below to get that perfect crispy edge with a soft, chewy middle. Just a heads up—oven temps can vary a bit, so keep an eye on them if it’s your first time!

INGREDIENTS:
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1/2 tsp baking soda
- 1/4 tsp salt (plus extra Malton salt to sprinkle on top if desired)
- 1/2 tsp vanilla extract
- 2 tbsp melted coconut oil
- 2 tbsp coconut or raw milk
- 1/2 cup enjoy life chocolate chips
INSTRUCTIONS:
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Combine all ingredients (except chocolate chips) in a bowl. If the dough feels a bit dry, add extra milk, one tablespoon at a time, until it forms nicely.
- Fold in the chocolate chips until evenly distributed.
- Chill the dough by forming it into a ball and placing it in the freezer for 10-15 minutes or the fridge for 45 minutes to an hour.
- Scoop dough into 1-inch balls and place on the baking sheet, leaving enough room for spreading.
- Bake for 8–10 minutes until the edges are golden.
- Cool the cookies on the baking sheet for at least 10 minutes before transferring to a cooling rack.
- Sprinkle with a bit of flaky salt, if you’re into that extra touch of salty-sweetness, and enjoy!
